Orange biscuits

60g blanched almonds, roughly chopped

60g candied orange peel, roughly chopped

zest of 1 oranges, finely grated

45g plain flour

60g unsalted or lightly salted butter

60g caster sugar

1 tbsp milk

Pour in the grated orange zest, flour, butter and sugar and blitz again. Add the milk and blend until the mix becomes a smooth dough.

Shape the dough into a 2.5 to 3.5cm diameter log. Wrap with plastic wrap then put in the refrigerator for about half an hour.

Heat the oven to 160°C. Line 2 baking sheets with non-stick baking paper.

Thinly cut the dough into slices and place them on the baking trays. Put in the oven for about 10 to 15 minutes or until they take a nice golden colour around the edges.

Take the cookies out of the oven then move them onto a wire cooling rack. You can keep these cookies in an airtight tin for several days.
