Oven roasted mushrooms with mozzarella

Cooking your mushrooms in the oven means they are soft and moist. The added cheese topping gives a delicious flavour but you can serve it without the cheese as a healthier alternative.
Butter for greasing
150g mushrooms, halved
1 spring onion, finely sliced
1 tsp olive oil
Salt and freshly ground black pepper to season
120g mozzarella cheese, grated
Preheat oven to 220°C / 425°F / Gas Mark 7. Grease an ovenproof dish with butter.
Add the mushrooms and spring onion and toss with the olive oil.
Season with salt and pepper.
Sprinkle the cheese on top and place in the oven for 30 minutes until the mushrooms are brown and the cheese is melted.
Remove from the oven and place in a serving dish.
