Panfried halibut with cherry tomatoes

Delicious light supper which is perfect for entertaining.
2 halibut fillets
Salt and pepper
2 tbsp olive oil
1 shallot, dicd
2 garlic cloves, minced
185g cherry tomatoes, halved
2 tsp fennel seeds
125ml white wine
Handful of purple basil, to scatter (substitute for regular basil if you like)
Season the fillets with salt and pepper.
Heat 1 tbsp olive oil in a non-stick frying pan over a medium heat. Add the fillets and cook for 3-4 minuteson each side. Transfer to a plate and cover to keep warm.
Reduce the heat and add the shallot and garlic, cook until translucent. Add the cherry tomatoes, fennel seeds and a pinch of salt and cook until the tomatoes begin to wilt.
Add the white wine and cook, stirring occasionally until it has reduced by half.
Spoon the tomato mixture on top of the halibut fillets and scatter with basil, before serving.
