Paprika infused pork

Paprika infused pork
A healthy one-pot dish, easy to make and goes well with rice.
 

1 tbsp olive oil

2 onions, finely sliced

400g pork fillets, trimmed of any fat, cut into thick strips

250g mushrooms, sliced

1½ tbsp smoked paprika

1 tbsp tomato purée

200ml chicken stock

100ml soured cream

Rice, to serve

In a large pan, heat the oil and tip in the onions.

Cook for 10 minutes until soft and golden.

Add the pork and mushrooms and cook on a high heat for 3-4 minutes to brown the pork and cook the mushrooms down slightly.

Add the paprika and cook for 1 minute more.

Stir in the tomato purée, then pour over the stock and simmer for 5-8 minutes until the pork is cooked through.

Last, mix in the soured cream and some salt and pepper.

Serve with rice, and sour cream on the side.
