Pear, walnut and blue cheese salad

This lovely and different salad offers your guest a medley of flavours and textures sure to please.
2-3 tbsp good-quality clear honey
3 rosemary sprigs
4 tsp olive oil, plus a drizzle for toasting the nuts
100g walnuts halves
Zest ½ lemon
2 tbsp balsamic vinegar
400g mixed leaves
2 ripe pears, halved, cored and thinly sliced
100g Blue cheese
Heat the honey and rosemary in a small pan with 1-2 tablespoons of boiling water.
Bring to a simmer and let it bubble for around 30 seconds
Remove from the heat and allow to sit.
Heat a frying pan and drizzle in a little oil.
Add the walnuts and toast until golden and starting to char a little here and there.
Remove from the pan and allow to cool.
Mix with the lemon zest and some seasoning.
Combine the olive oil and balsamic vinegar with some salt and pepper.
Toss the salad leaves in most of the dressing, then arrange on serving plates or a platter, layering the leaves with the pear slices. Top with little chunks of blue cheese and the walnuts then drizzle over some of the rosemary honey and the remaining dressing.
