Pear with oat muffins

Pear with oat muffins
Soft, light muffins with oats and fruit throughout. 
 

260g whole wheat flour

80g oat bran, plus a little more for sprinkling

1 tbsp baking powder

1 ½ tsp baking soda

1/8 tsp cinnamon

100g walnuts, chopped

1 pear, grated

100g brown sugar

355ml buttermilk

60 ml water

1 tbsp apple cider vinegar

1 tsp vanilla extract

5 tbsp vegetable oil

Preheat the oven to 200°C / 400°F / Gas mark 6.

Line a muffin tin with paper cases.

In a large bowl combine together all the dry ingredients along with the grated pear and mix well.

Use a large bowl for the buttermilk, water, vinegar, vanilla extract and oil.

Whisk together.

Dissolve the brown sugar in this liquid mixture with a fork.

Add the wet ingredients to the dry ingredients, stirring just until moistened.

Spoon the batter in each muffin case to the top.

Sprinkle a teaspoon of oats on each.

Bake for 20 minutes or until a toothpick inserted in the middle of the muffin comes out clean.

Leave it in the tin for 10-15 minutes then transfer to a wire rack.
