Peppermint Patties

Peppermint Patties
These no-bake treats make for lovely edible Christmas gifts.

1 egg white

½ lemon, juiced

1 tsp peppermint extract

425g icing sugar

175g dark chocolate, melted

Whisk the egg white in a bowl.

Add in the lemon juice, peppermint extract and icing sugar  and continue whisking until a stiff paste forms.

Lay the mixture out on a work surface dusted with icing sugar and roll out thinly.

Use a small round cookie cutter to cut out circles and place them on a lined baking tray.

Chill in the fridge for 1-2 hours or until the mixture has set.

Cover or create a design using the melted chocolate over each peppermint pattie, then lay out on a baking tray.

Chill the peppermint patties until set, at least an hour.
