Pitta pizzas
These pitta pizzas are perfect as an after school snack or to pop into little lunch boxes. You can make them with whatever topping you like, ham and sweetcorn, ham and pineapple or cheese and tomato.

4 wholewheat pitta breads

4 tsp sun-dried tomato purée

3 ripe plum tomatoes , diced

1 shallot, thinly sliced

85g chorizo, diced

50g cheddar, grated

Few basil leaves, if desired

Heat oven to 200°C/400°F/gas 6 and place a baking sheet inside to warm.

Spread each pitta with 1 tsp of tomato purée.

Top with the tomatoes, shallot, chorizo and cheddar.

Place on the baking tray and bake for 10 mins until the pittas are crisp, the cheese has melted and the chorizo has frazzled edges.

Scatter with basil, if you like, and serve with a green salad or pop into lunch boxes for a delicious alternative to a boring sandwich.
