Potato and bacon layer

Potato and bacon layer

4 rashers, cut into small pieces

1 onion, chopped finely

1 clove of garlic, chopped finely

1 tbsp oil

salt and pepper

5 medium potatoes, peeled, halved and parboiled for 10 minutes

100g gruyere/ edam cheese, grated

125ml cream

fresh parsely to garnish

Parvoil potatoes for 10 minutes. Drain cool, cut into thin slices.  In a frying pan, heat oil, fry rashers for 3 minutes and then add onion and garlic and cook until soft. Grease ovenproof dish and cover bottom with 1/3 of the potato. Add half of the rasher mix and 1/2 of the cheese. Season, continue to layer, finishing with potato.  Pour over the cream and sprinkle cheese generously over top. 

Bake for 30-35 minutes until the potatoes are soft and golden on top.
