Potato and tuna pie

Try a healthy and child friendly meal recipe that is easy to throw together.
For the filling
1 tsp unsalted butter
1 onion, finely chopped
Mustard powder (a pinch)
2 tbsp single cream
100 ml whole milk
70g cheddar cheese, grated
Fresh parsley (a pinch), chopped
200g tinned sweetcorn, drained
2 tsp cornflour
2 x 160g tinned tuna, drained
For the topping
3 potatoes, peeled and chopped
4 tbsp single cream
White pepper (to taste)
For the filling
Add the butter and onions to a saucepan and just cover with water and cook until tender.
Add the mustard powder, single cream, whole milk and stir to combine.
Add the cheese, parsley and sweetcorn to the sauce and mix well.
Mix the cornflour with a splash of cold water and add to the saucepan whilst stirring.
Add the tuna flakes to the sauce and cook for 10 minutes, stirring.
Preheat the oven to 180°C / 350°F / Gas mark 4.
For the topping
Cook the potatoes in boiling water until soft then mash with the cream and white pepper adding some salt to taste.
Layer the mash over the tuna mixture and bake for 10 minutes for a crispy top.
