Prawn bruschetta

Prawn bruschetta
Ideal for sharing, make these simple tasty shell fish bruschetta. 

200g cooked large prawns, defrosted if frozen

1 tbsp olive oil, plus more for drizzling

1 garlic clove, finely sliced

1 lemon, halved

Handful parsley leaves, roughly chopped

1 ciabatta, focaccia or a baguette loaf, cut into slices

2 x large handful rocket

½ cucumber, sliced thinly

Drizzle the prawns with olive oil and scatter with garlic.

Add some salt and pepper then squeeze the juice of 1 lemon over and toss to coat.

Heat the grill to medium or place a griddle pan on medium heat and cook the prawns until evenly pink.

Remove from the heat or the grill, season with salt and pepper and drizzle with a bit more oil and scatter with parsley.

Lightly toast the bread of choice under the grill for only a couple of minutes then layer up each portion with the rocket, cucumber and prawn with herb mixture before serving.
