Quick chicken biryani
The Indian spices really pick up a simple chicken and rice dish!

350g basmati rice

1 tbsp olive oil

1 onion, finely sliced

1 cinnamon stick/1/4 tsp cinnamon powder

1 tsp cumin

1 tsp mild curry powder

80g frozen petis pois

4 chicken breasts, cut into 2cm cubes

Handful of currants or sultanas

Handful slivered almonds, toasted

2 tbsp roughly chopped coriander leaves

Cook rice to packet instruction, drain and set aside.

Sauté  the onion in the olive oil on a medium heat until softened.

Add the cinnamon stick/powder, cumin and curry powder. 

Add the peas and allow to thaw.

Add the chicken and cook through. About 10 minutes.

Stir in the raisin/sultanas and cook for another minute.

Stir in the rice and combine well.

When serving, sprinkle with almonds and coriander.
