Rice and cheese balls
These rice balls are so easy but are a great way to serve rice. They are perfect for parties and you can add meat if you like. 

200g rice
Salt and pepper, to season

3 large eggs

120g Cheddar cheese, grated
115g breadcrumbs

100g flour

Handful lettuce leaves

Favourite dip for serving

Preheat oven to 180°C/ 350°F/ gas mark 4. Line a baking tray with parchment paper.

Cook the rice according to packet instructions. When ready drain off excess water. Season with salt and pepper.

In a small bowl, beat two eggs together and sprinkle in the cheese.

Pour the egg and cheese mix into the rice. Give it a good mix before transferring to a bowl.

Chill in the fridge for 1 hour.

Pour the breadcrumbs into a bowl and crack the remaining egg into another bowl.  

In a third bowl, pour in the flour.

Remove the rice from the fridge and shape into balls using your hands.

Roll the rice in the flour, then the egg ad finally the breadcrumbs.

Place in the oven for 15 minutes, until golden.

Serve with the lettuce and your favourite dip.
