Rice crispy chocolate balls

Rice crispy chocolate balls
Simple and tasty treats for the kids after school using leftover chocolate.
 

200g rice popped cereal

75g desiccated coconut (optional)

200g leftover chocolate

Line a large baking tray with grease proof paper and set aside.

Melt chocolate in a heat proof bowl over a pan of barely simmering water, do not allow the bowl to make contact with the water. Stir throughout the melting process.

Mix in the rice popped cereal and coconut if using.

Drop large dollop spoonfuls into paper cupcake cases for a bit of exterior decoration if you like. Line them on the baking tray and chill until set.
