Rice pancakes

Rice pancakes
These pancakes are a great way to serve rice. 

300g brown rice, cooked

120g cheddar cheese

3 eggs, lightly beaten

30g plain flour

Salt and pepper

1 tbsp olive oil

Fresh dill to garnish

Cook the rice according to packet instructions. Drain and set aside.

While the rice is cooking beat the eggs together. When ready, drain and pour the rice into a large bowl.

Pour in the beaten eggs and ensure the rice is covered.

Add the flour and season with salt and pepper.

In a frying pan, heat the oil over a medium temperature.

Scoop 2 tablespoons of the mixture onto the pan and flatten into a fritter shape. Fry for 3 minutes on either side.

Do this until all the rice mixture is used up.

Leave to cool on a wire rack.

Serve on a plate of fresh dill.
