Roast chicken soda bread pizza

This homemade pizza is a great alternative to a shop bought one and you can get the kids involved too.
Pizza Base:
300g plain white flour
½ tsp bread soda
½ tsp salt
200-250ml buttermilk
Toppings: (feel free to vary as much as you like)
3 tbsp tomato passata
150g Green Farm Foods Torn Chicken
1 small red onion, sliced
3-4 mushrooms, sliced
150g mixed peppers, chopped
75g sliced chorizo
175g grated mozzarella cheese
Lightly grease and flour a large flat baking tray and preheat the oven to 200C/Gas mark 6.
Sieve the plain flour into a large mixing bowl and then sieve in the bread soda. It is vitally important that the bread soda be sieved as it tends to clump together. Add in the salt at this stage also and mix well.
Stir in enough buttermilk so that the dough is soft and “sticky”.
Transfer the dough on to a well-floured work surface and knead for a moment or two until the dough forms into a ball. Flatten the dough on the baking tray in either a round or rectangular shape and bake in the preheated oven for 12-15 minutes.
When it comes out of the oven, flatten with another baking tray to achieve an even surface.
Spread the pizza base with the tomato passata and then pile the pizza high with the toppings.
Transfer to the oven and bake for a further 10-15 minutes until the cheese is bubbling and everything is cooked through.
Garnish with some fresh rocket leaves
