Rosemary lamb patties

Rosemary lamb patties
Simple and delicious patties made with fresh herbs and spring lamb mince.
 

500g minced lamb

2 garlic cloves, minced

1 tbsp finely chopped fresh rosemary leaves

2 tsp toasted fennel seeds, coarsely crushed

3 tbsp olive oil, plus more if needed

Coarse salt and freshly ground pepper

Green salad to serve

In a large bowl combine the lamb, garlic, herbs, spice, and olive oil using your fingers to mix well.

Add in some salt and pepper and mix again.

Form into as many patties as possible and layer on a plate, with each layer separated by parchment or plastic wrap.

Wrap well in plastic wrap; refrigerate at least 30 minutes.

Heat 1 teaspoon of oil in a large skillet over medium-high heat.

Working in batches, cook the patties for 4 minutes on each side for medium.

Transfer to a serving plate, and loosely cover with foil to keep warm.

Cook remaining patties, adding more oil if necessary and reducing heat if pan gets too hot.

Serve with fresh salads.
