Salmon and cucumber ‘sushi’ sandwiches

Salmon and cucumber ‘sushi’ sandwiches
These sushi sandwiches are loaded with protein, as well as Omega 3 which is the main fatty oil essential in brain development. Not to mention they are delicious and fun for the children to have in their lunchboxes.
 

3 slices bread
4 smoked salmon
3 thin slices, cucumber

Low fat cream cheese to spread

Roll each slice of bread flat with a rolling pin or a cup and remove the crusts.

Spread a layer of cream cheese over each slice of bread.

Place the salmon on top of each slice, filling as much of the bread as you can.

Put a cucumber slice on the very edge of the each slice

Roll tightly then unravel and cut into sushi pieces.
