Salmon & cucumber sushi sandwiches
These sushi sandwiches are loaded with Omega 3 which are the main fatty oils essential in brain development. Not to mention they are delicious and fun for the children to have in their lunchboxes.
 

Low fat cream cheese to spread

3 slices bread
4 smoked salmon
3 thin slices, cucumber

Butter lettuce, optional

Sliced tomato, optional

Roll each slice of bread flat with a rolling pin or a cup and remove the crusts.

Spread a layer of cream cheese over each slice of bread. 

Place the salmon on top of each slice, filling as much of the bread as you can.

Put a cucumber slice on the very edge of the each slice

Add a small piece of butter lettuce and a slice of tomato (optional)

Roll tightly and cut into sushi pieces.
