Salmon with a cheese crust
The topping on these salmon fillets are deliciously crunchy.

4 salmon fillets

50g softened butter

4 tbsp flaked almonds

4 tbsp parsley

50g Parmesan cheese, grated

100g breadcrumbs

Preheat the oven to 180°C/350°F/ gas 4. Grease an ovenproof dish with the half of the butter.

Coat the salmon fillets with the remaining butter.  Season with salt and pepper.

In a small bowl, combine half of the almonds, parsley, basil cheese and 50g of the breadcrumbs together.

Use your hands to coat the top of the salmon with the almond and cheese mix.

Sprinkle the rest of the almonds and breadcrumbs on top.

Place in the oven for 20 minutes until the salmon is cooked through and the top is crispy.

Serve with roasted vegetables or homemade potato wedges.
