Salmon with roasted cherry tomatoes

300g cherry tomatoes
1 1/2 tsp chopped fresh thyme
1 tsp olive oil
1/4 tsp salt
1/4 tsp black pepper
2 garlic cloves, minced
1 tbsp olive oil
2 salmon fillets
2 tbsp fresh lemon juice
Preheat oven to 200°C/400°F/ gas 6
Mix together the first six ingredients in a cooking tray lightly coated with olive oil; toss to coat tomatoes.
Bake at 200°F/ 400°C for 15 minutes. Add the salmon and bake for a further 10 minutes until the fish flakes easily.
Serve the tomato mixture over the fish with couscous or rice.
Drizzle with lemon juice.
