Santa brownies

225g margarine
400g caster sugar
4 eggs
2 tsp vanilla extract
55g cocoa powder
125g plain flour
1/2 tsp salt
1/2 tsp baking powder
Chocolate frosting:
80g butter
45g cocoa powder
4 ½ tbsp of milk
180g icing sugar
Santa hats:
250ml cream, whipped
Whole strawberries, hulled
Preheat oven to 180⁰C. Line a baking tin 30cm x 20cm with grease proof paper.
In a large bowl, melt the margarine in a microwave for about 10-20 seconds. Stir in sugar, eggs, and 1 teaspoon vanilla and mix together.
Sieve the cocoa, flour, salt, and baking powder into mixture and combine thoroughly.
Spread batter into prepared pan and bake 30 to 35 minutes.
While the brownies cool, make the frosting. Melt butter in a saucepan and sieve in the cocoa. Cook for about 1 minute over a low heat and then add the milk and icing sugar, stirring until fully combined.
Frost brownies while they are still warm.
Once the brownies have cooled slightly, cut the cake into smaller squares and top each square with a spoonful of whipped cream.
Sit a strawberry on top of the cream and add another little blob of cream to the top of each strawberry to make Santa's hat.
