Sausage hotpot

Kids will love the sausages so much they won't notice the beans.
8 pork sausages
1 tbsp olive oil
1 onion, sliced
2 cloves garlic, crushed
1 red pepper, sliced
1 tbsp tomato paste
2 x 400g tins diced tomatoes
400g cannellini beans
1/2 bunch thyme
Parsley to garnish
Preheat the oven to 200°C or gas mark 6.
Add the oil to a saucepan and gently cook the sausages until they are brown. Set aside.
In the same pan saute the onions for about 5 minutes. Add the garlic and pepper and cook for a further 2 minutes. Add tomato paste and cook for another minute.
Stir in the tomatoes, a tin of water, the beans and herbs.
Return sausages and ensure all ingredients are mixed together well.
Spoon all the ingredients into an oven proof dish and place in the oven for 20 minutes.
Garnish with parsley.
