Savoury spring bake
This is like a savoury tray bake, with courgettes, squash or any spring vegetables you like with, herbs and Parmesan cheese.
 

100g plain flour

1 tbsp baking powder

1 tsp caster sugar

1 tsp salt

50g freshly grated Parmesan cheese

1 tbsp minced fresh parsley

½ tbsp chopped fresh oregano

1 tbsp chopped fresh basil

4 eggs

125ml olive or vegetable oil

1 onion, chopped

3 courgettes, sliced either lengthwise or in circles

1 small yellow squash, cut in similar manner

Preheat the oven to 180°C / 350°F / Gas mark 4.

Grease a 20x30cm baking dish and set aside.

In a bowl, combine the flour, baking powder, sugar, salt, Parmesan cheese, parsley, oregano and basil.

Beat together the eggs, oil and the onion and mix into dry ingredients just until combined.

Fold in vegetables.

Turn everything into the baking dish and bake for 30-35 minutes or until golden brown and set.

Serve with a green salad if you like.
