Savoury vegetable mince

Savoury vegetable mince
This savoury mince has a lot of hidden vegetables, yet still packs a protein punch. It’s not a chili but has a similar texture and is very diverse.
 

500g beef mince
1 onion, finely chopped
1 stalk celery, sliced
2 cloves garlic, crushed
1 courgette, grated
1 carrot, peeled, grated
10 mushrooms, finely sliced
½ red pepper, finely chopped
235ml beef stock
2 tbsp Worcester sauce
1 tbsp BBQ sauce
2 tsp soya sauce
1 tbsp corn flour
150g frozen peas

Heat a large frying pan over medium heat.

Brown the mince, stirring to separate.

Use a slotted spoon to drain the meat and set aside.

Rinse the pan using hot water from a kettle.

In the pan over a medium heat, add in the olive oil, the onion and celery.

Cook, stirring for a couple of minutes until the onion starts to soften.

Toss in the garlic for a minute before adding in all the rest of the vegetables.

Once they are all mixed through and starting to cook, add in the mince then mix well.

Pour in the stock and the sauces and combine.

Put the corn flour in a cup or small dish.

Spoon some of the cooking liquid into the cup and stir until you have a lump-free paste.

Pour that back into the mince mixture and stir.

Reduce the heat, add the peas and simmer for 10 minutes, until everything is cooked through.

Serve with rice, or flour tortillas.
