Scrambled eggs with Feta cheese
The Feta cheese adds a tasty addition to a classic scrambled egg dish.
 

1 small onion, diced

5 tbsp olive oil

3 tomatoes, grated

6 eggs

A pinch of salt

1/2 tsp of pepper

1 tbsp of water

3 1/2 ounces of feta cheese, cut in small pieces

Heat the oil in a frying pan over a medium heat and add your onion. Fry until soft, about 3 minutes.  

Add in the tomatoes and cook for a further 5 minutes.

While the tomatoes are cooking, use a fork to gently whisk the eggs, water, salt, and pepper together in a small bowl.

Add your feta and your egg mix to the tomatoes. Combine well.

Cook for about 3 minutes on a medium heat.
