Seafood gratin bake
A lovely bake easy to do and loaded with delicious seafood.
 

For the seafood

350g cooked and peeled king prawns

240g mussels (without the shells)

1 red pepper, sliced thickly in strips then halved

For the sauce

25g butter

25g plain flour

400ml semi-skimmed milk

2 cloves

2 black peppercorns

1 bay leaf

1 onion, halved and studded with the cloves

1 head of broccoli, cut into small florets

For the garnish

50g breadcrumbs

50g white cheddar cheese, grated

Prepare the sauce first.

Combine the milk, prepared onion, black peppercorns, cloves and bay leaf in a large saucepan.

Bring to the boil, then remove from the heat for 15 minutes.

Strain into a jug or bowl.

Melt the butter in a large saucepan over a medium heat.

Whisk in the flour until a smooth sauce is achieved and cook, whisking occasionally for 1 minute.

Whisk in the milk in a slow, steady stream into the sauce until it has thickened.

Add the broccoli and simmer the sauce over a gentle heat for 6-8 minutes, stirring occasionally.

Season with salt and pepper to taste.

Add the seafood and the red pepper to the sauce and stir well to coat.

Preheat the grill to hot.

Spoon the broccoli and seafood sauce into ramekins.

Sprinkle with breadcrumbs and cheese on top and place under the grill for 1-2 minutes until golden brown and the cheese has melted through.

Remove from the grill and let them cool for 1 minute before serving.
