Simple frittata bake

This frittata bake is really easy and is a perfect way to fill up a hungry household.
2 large potatoes
2 tbsp olive oil
1 onion, chopped
70g pancetta, chopped
100g baby spinach
3 large tomatoes, halved
1 yellow pepper, chopped
8 eggs
115g cream
60g mozzarella cheese, grated
30g cheddar cheese
Preheat oven to 200°C or gas mark 6.
Gently cook the potatoes in a pot of slightly salted water until they are tender.
Heat the oil in a frying pan and gently cook the onion and the pancetta for about 6 minutes until the pancetta is golden. Add the spinach and cook for a further minute.
Combine the onion and pancetta mix with the tomatoes and pepper.
In an ovenproof dish, layer the potatoes and onion mixture until they are all used.
In a large bowl, whisk the eggs and cream together and pour over the bake. Top with the parmesan cheese before putting into the oven for 40 minutes.
