Vegetarian quiche

Vegetarian quiche
This quiche is really filling and is great for using up any veggies you have leftover in your fridge. 

1 tsp butter

2 tsp olive oil

1 sheet frozen puff pastry, thawed

4 eggs

200ml milk

Pinch salt

1 red pepper, chopped

1 onion, sliced

6 cherry tomatoes, halved

6 button mushrooms, sliced

50g cheese, grated

Preheat oven to 180°C or gas mark 4

Grease an ovenproof dish with a little butter. Line with the puff pastry making sure it goes up around the edge. 

In a bowl, mix the eggs, milk and salt together. Add the pepper and onion.

Pour over the pastry and top with the cherry tomatoes and mushrooms. Sprinkle cheese on op before placing in the oven for 30 minutes.
