Simple Paella

This Paella is really simple to make.
1 tbsp olive oil
1 onion, sliced
110g pack chorizo sausage, chopped
1 tsp turmeric
300g long grain rice
800ml chicken stock
1 green pepper, sliced
1 red pepper, sliced
1 yellow pepper, sliced
100g peeled prawns
Salt and pepper, to season
Pour the oil into a large frying pan and heat on a medium temperature. Add the onion and cook for 4 minutes.
Add the chorizo slices and fry for about 5 minutes.
Add the turmeric and stock. Give it a good stir before pouring in the rice.
Bring to the boil before reducing the temperature. Allow to simmer for 15 minutes or until all or most of the stock is gone.
Add the peppers and prawns and cook for 5 mins.
Season with salt and pepper before serving.
