Smarties Halloween gingerbread cookies

Smarties Halloween gingerbread cookies

350g plain flour

1tsp bicarbonate soda

2tsp ground ginger

100g butter

175g brown sugar

4tbsp golden syrup

1 beaten egg

5 tubes of Smarties

270g icing sugar

Water

Food colouring (red)

Writing icing (red and black)

Sift the plain flour, mix 1 tsp bicarbonate of soda & 2 tsp ground ginger together.

Rub in 100g of butter, then add 175g brown sugar, 4tbsp golden syrup and 1 beaten egg.

Mix to form a soft dough. Roll out and stamp out your ghosts and bats. Use remaining dough to shape a pumpkin. (I used the end of a ghost to fashion a stalk.)

Place on a greased baking sheet and bake at Fan180ºC/Gas Mark 5 for 10-12mins. Leave to cool before icing.

To make the icing simply mix the icing sugar with 4 tablespoons of warm water, halfed the mixture and added a little red food colouring to one for my bats. Spread on each cookie.

Decorate with Smarties and writing icing!
