Soda Focaccia
Really simple soda based version of popular focaccia bread.

450g plain flour, sifted

1 tsp salt

1 tsp bicarbonate soda

400ml buttermilk

20 black olives

3 sprigs rosemary

60ml extra virgin olive oil

Sea salt, to sprinkle

Preheat oven to 220°C/425°F/Gas 7.

Grease a baking tray with a little olive oil.

Add plain flour, salt, bicarbonate soda into a large bowl.

Make a well in the centre and pour in the buttermilk. Use your hand shaped liked a claw to mix the flour into the buttermilk. Once the dough has come together, turn it out onto a floured board and roll it out to fit the tin.

Press dimples into the dough with your fingertips.

Scatter olives and rosemary sprigs on top, along with a sprinkling of sea salt.

Bake in the oven for 30 minutes or until golden brown.
