Special spring rolls
Crispy vegetable rolls are quick and easy to make and will become something of a hit at your house. 
 

300g mixed stir-fry vegetables

2 tbsp soy sauce

2 tbsp sweet chilli sauce

2 tbsp roasted peanuts, chopped

Handful chopped mint

Handful chopped coriander

4 sheets filo pastry

A little melted butter

Preheat the oven to 200°C / 400°F / Gas mark 6.

Line a baking tray with greaseproof paper and set aside.

Use a large bowl to put the vegetables, sauces, peanuts and herbs and stir well to combine.

Cut the pastry sheets in half and brush with some of the melted butter.

Stick 2 of the halves together, then layer a ¼ of the filling in the centre.

Brush with a little more butter and roll up.

Transfer to the baking tray.

Repeat with remaining sheets, then brush with a little more butter.

Bake for 15-20 minutes until crisp and golden.

Serve with extra sweet chilli sauce on the side.
