Speedy roast chicken and potatoes

1.6kg chicken
2 tsp smoked paprika
1 tsp sea salt
1/2 tsp cracked black pepper
2 tbsp vegetable oil
Green Isle Roast Potatoes to serve 4

Heat the oven to 200°C
Place the chicken back-side up. Cut through the ribs along both sides of the backbone with kitchen scissors. Take the backbone off. Turn the chicken skin-side up, push down to flatten then put in a baking dish.
In a bowl, mix together the paprika, thyme, salt, pepper and oil. Brush the chicken with this spicy oil.
Line a baking sheet with non-stick parchment paper and then toss in the Green Isle Roast Potatoes. Drizzle with the seasoned oil.
Put the chicken and potatoes in the oven for 30 minutes. The potatoes should be tender and the chicken well-cooked.
Remove from the oven and serve with lemon wedges.
