2-3 tbsp olive oil

1 small onion, finely sliced

2 garlic cloves, crushed

1 tsp cumin

1 bunch spring onions, sliced

2 fresh mackerel fillets, skin on

Handful parsley, chopped

Lemon wedges, to serve

Put the potatoes in a pan of salted water and bring to the boil.

Simmer for 10 minutes until tender.

Drain then return to the pan.

Shake the pan to make the potatoes go a bit fluffy in texture.

Heat the butter and 2 tablespoons of the olive oil in a pan over a medium heat.

Cook the onion for 5 minutes, until softened then add the garlic and cumin in the last 30 seconds.

Tip in the potatoes, increase the heat and cook for 5 minutes further, turning until lightly golden.

Add the spring onions and cook for 5 minutes more and season with salt and pepper.

Meanwhile, score the skin of each mackerel fillets.

Turn them over and rub 1 teaspoon of harissa into the flesh of each one.

Heat the remaining oil in a pan.

Scatter the parsley over the potato mixture and divide between plates and serve with the cumin flavoured potatoes.
