Spicy fried rice

Spicy fried rice
This spicy fried rice is great both hot and cold. Use it as a side dish for dinner and use the leftovers for school lunches. 
 

500g rice

3 tbsp olive oil

2 large chicken fillets, shredded

3 cloves garlic, crushed

6 eggs, lightly beaten

30ml soy sauce

30ml sweet chilli sauce

50g corn

50g peas

Cook your rice according to the packet instructions. Set aside.

Gently heat 1 tablespoon of your oil in a frying pan on a medium temperature. Add in your garlic and chicken and cook for 10 minutes, or until cooked though. Shred the chicken and set aside.

Beat your eggs together in a small bowl.

Spoon the rest of your oil into the same pan and pour in your eggs. Cook until fluffy. 

Return the chicken to the same pan as the egg and add the rice, soy sauce,  sweet chilli sauce, corn and peas.

Gently fry for 5 minutes on a low heat being careful not to let it burn.
