1 tsp black mustard seeds
60 g very low-fat natural yoghurt
1 tbsp mango chutney
1 tsp curry powder
½ onion, grated
1 tbsp chopped coriander or parsley
250 g turkey breast meat, skinned and boned
salt and ground black pepper
2 x 60 g whole-grain rolls
2 tsp tomato ketchup
25 g rocket leaves

Heat a small pan and add the mustard seeds. Cook for 2–3 minutes, shaking occasionally, until they pop.

Mix together the mustard seeds, yoghurt, chutney, curry powder, onion and herbs.

Put the turkey in a blender and blitz briefly until roughly minced. Stir into the yoghurt mixture and season with salt and pepper.

Using your hands, shape the mixture into 2 round patties. Cover with cling film and chill in the refrigerator for 10 minutes to firm them up.

Cook under a preheated grill for 6–7 minutes each side, until thoroughly cooked.

Put each burger in a split whole-grain roll with ketchup and rocket. Serve with salad tossed in oil-free dressing
