Sweet and sour chicken

2-3 large skinless, boneless chicken breasts
425g can pineapple chunks
2 tbsp tomato ketchup
2 tbsp malt vinegar
2 tbsp cornflour
1 tbsp vegetable oil
1 onion, chopped
1 red chilli, deseeded and sliced
1 red and green pepper, chopped
2 carrots, sliced diagonally
125g baby corn, sliced lengthways
2 tomatoes, quartered
Rice, to serve
Make the sweet and sour sauce by mixing together the pineapple juice, ketchup, vinegar and cornflour with a whisk and set aside.
Heat the oil in a wok/ frying pan over high heat and add the onion, chilli, peppers, carrots and chicken and stir-fry for 3-5 minutes until the vegetables and chicken are almost cooked. Add the baby corn, tomatoes and the sauce and cook for 4 minutes until the sauce begins to thicken and the chicken and vegetables are fully cooked. Serve with rice.
