This chutney brings your cheese platter to a whole new level.
4 red peppers, roughly chopped
4 yellow peppers, roughly chopped
10 red chilli, roughly chopped, with about half the seeds removed
2cm fresh root ginger, roughly chopped
3 red onions
8 garlic cloves
400g chopped tomatoes (1 can)
450g golden syrup (1 can)
200g caster sugar
250ml red wine vinegar
Put the peppers, chillies, ginger, red onions and garlic into a food processor, then pulse until finely chopped.
Transfer into a large saucepan. Add the tomatoes, sugar, golden syrup and vinegar. Bring the mixture to the boil. Skim off any scum that forms on the surface and turn the heat down to a simmer. Cook for about two hours, stirring occasionally.
Cool slightly, transfer to sterilised jars, then leave to cool completely upside down. Refrigerate once opened and consume within 3 months. Serve with cheese, bread or cold meat.
