This is a very straight forward recipe that makes for a lovely afternoon treat with tea or coffee, perfect for serving to visitors.
375g packet of mixed fruit (sultanas, raisins, currants)
300ml cold tea
225g self raising flour
125g caster sugar
1 beaten egg
½ tsp mixed spice
Pre-heat the oven 170°C/325°F/gas mark 3 and lightly grease and line a 2lb loaf tin (900g) or 20cm round cake tin with greaseproof paper.
Put the fruit and tea into a mixing bowl and leave to soak overnight.
Add the flour, sugar, beaten egg and mixed spice and mix well until thoroughly combined.
Transfer into the prepared cake tin.
Bake for approximately 55-60 – the brack should be firm to the touch and well risen.
Remove from the oven and cool in the cake tin for 10 minutes before transferring to a wire cake rack to cool fully.

This brack tastes best and is more moist if wrapped in greaseproof paper and kept for two days before slicing. Our Recipe Tester glazed the cake with warmed honey when it had cooled down. It gave a nice sheen and also a nice taste to the crust.
