Thai salmon salad

175g bean sprouts

5 tbsp freshly chopped coriander

4 spring onions, cut into strips

50g cashew nuts, toasted and roughly chopped

1 bird's eye chilli, finely sliced

100g mangetout, shredded

1/4 Chinese lettuce

1/2 small red pepper, deseeded and finely sliced

200g salmon, fillet, cooked, cooled and flaked

For the dressing

Zest and juice of 1 lime

3 tbsp sesame oil

2 cm piece of fresh root ginger, finely grated

In a large bowl, gently combine all the salad ingredients together.

Pour all the dressing ingredients into a jar with a screw-top lid and mix by shaking vigorously. Drizzle over the salad, stir and serve.
