Thai salmon with cucumber and dipping sauce
4 salmon fillets
1/2 red chilli, chopped and deseeded
2 garlic cloves, diced finely
2 tbsp honey
1 tbsp fish sauce
1/4 cucumber , diced
Red onion, diced
4 tbsp sweet chilli sauce,
2 tsp of lime juice
Coriander, handful, roughly chopped
Into a bowl, add the salmon, chilli, coriander, garlic, fish sauce and honey.
Season and place to chill in the fridge overnight.
Grill the salmon until firm and slightly crispy.
Mix the sweet chilli and lime sauce. Serve with the chopped red onion and cucumber and the dipping sauce.
