Tomato and egg nests
These egg nests are perfect for toddlers and even make great party food.
 

4 tomatoes

4 eggs

2 tsp butter

4 tbsp grated cheese

1 slice bacon, diced

1 tbsp oil

Flat leaved parsley to garnish

Preheat the oven to 200°C or gas mark 5. Cover a baking tray with baking paper.

Slice the top off each tomato and scoop out the middle. Use it in another recipe.

Spoon half a teaspoon of butter into each tomato and place in the oven on the baking for 3 minutes.  Remove and set aside.

While the tomatoes are baking you can cook the rasher. Heat the oil in a frying pan on a medium heat and cook the bacon for about 3 minutes. Remove and set aside.

Beat the eggs together in a bowl and add in the bacon slices. Pour the egg mix into each tomato. Sprinkle a little cheese on top and place in the oven for 10 minutes or until the eggs are set.

Garnish with the parsley.
