Tomato pepper dip
An alternative dip for just about anything, low in calories and loaded with vitamin c.
 

375g sweet piquant peppers (found in most supermarkets)

3 tomatoes, roughly chopped

1 tbsp sundried tomato paste

1 bunch chives, finely chopped

Drain and rinse a the peppers and using a food processor, blitz with the tomatoes, sundried paste and most of the chives until you have made a chunky paste.

Add a bit of salt and pepper to taste.
