Tuna and rice
This dish is easy enough to put together and involves very little cooking making it great for when you are short on time.

400g rice

Handful mixed lettuce leaves, roughly cut

6 cherry tomatoes, quartered

400g (or 1 large tin) tuna

Salt and pepper to season

½ tsp olive oil

Cook the rice according to packet instructions. Drain and leave aside.

Spoon the tuna into a medium bowl and either mash it together with a fork or leave it chunky.

Toss in the lettuce leaves and rice.

Sprinkle the olive oil over it and season with salt and pepper.

Spoon onto a plate and add the tomatoes before serving.
