Ultimate garlic bread

Ultimate garlic bread
This side-dish recipe comes with a chunky tomato, basil, and garlic sauce with capers and olives. 
 

2 garlic bulbs

1 tsp olive oil

Garlic Butter:

230g unsalted butter, softened

2 tbsp Parmesan cheese

1 ½ tsp garlic, crushed

1 ½ tsp Italian herbs

1 ½ tsp fresh parsley, chopped

½ tsp crushed red chilli flakes (optional)

Tomato Basil Sauce

4 tbsp olive oil

6 cloves garlic, finely chopped

4 tomatoes, chopped

3 tbsp basil, roughly chopped

½ tsp black pepper

2 tbsp capers

Handful black or green olives, roughly chopped

Bread:

1 sourdough bread or rustic loaf, cut in half lengthwise

2 tbsp Parmesan cheese, grated

Preheat the oven to 180°C / 350°F / Gas mark 4.

Line a baking tray with greaseproof paper and set aside.

Slice the tops off of garlic bulbs and drizzle each with ½ teaspoon of olive oil.

Wrap in foil and bake for 1 hour.

In a medium-size bowl, combine the butter, parmesan, crushed garlic, Italian herbs, parsley and chilli flakes, if using then refrigerate.

In a medium pan over medium heat combine 4 tablespoons of oil and the garlic.

Cook until lightly browned, about 2 minutes.

Add the tomatoes and heat through.

Stir in the basil, pepper, capers and olives then remove from heat.

Remove roasted garlic from oven, unwrap foil and cool.

Once cooled, squeeze cloves from papery skin and set aside.

Spread the garlic butter over the bread (reserve ½ for another use).

Bake for 20 minutes, until browned.

Top with tomato sauce mixture and parmesan cheese.

Slice and serve.
