Vegetable biryani
This vegetable rice dish is a perfect accompaniment to any dish.

200g basmati rice

5 tsp butter

1 garlic clove, minced

½ red onion sliced

2 large carrots sliced

100g frozen peas

1 chilli

2 tbsp garam masala

1 tbsp ginger paste

1 tbsp chilli flakes

1 apricot sliced

Handful coriander leaves

Salt and black pepper

Cook the rice according to packet instructions.

In a frying pan, melt the butter and cook the garlic. After about 4 minutes add the onion and cook for a further minute.

Add the sliced carrots and peas and cook for 4 minutes.

Add the chilli and chilli flakes.

Next, spoon in the garam masala and ginger paste. Make sure it is well combined before pouring into the saucepan with the rice.

Mix well and leave to combine for a couple of minutes.

Pour into a bowl and top with the apricot and coriander leaves.

Season with salt and black pepper.
