Spicy Mexican rice

Spicy Mexican rice
This rice is full of mild spices and can be served hot or cold.

1 tbsp olive oil

1 large onion, diced

400g white rice

1 tsp ground cumin

1 ½ tsp chilli powder

1 tsp salt

1 garlic clove, minced

250ml vegetable stock

Heat your oil in a saucepan over a medium temperature. Add your onion and sauté until golden.

Pour in your rice and toss with the onion. Add in the cumin, chilli, salt and garlic. Mix together.

Pour in your stock and increase the temperature. Bring to boil before reducing the temperature.

Allow to simmer for 30 minutes until rice is soft.

Drain off any excess stock and serve.
