Vegetarian pasta or pizza sauce
Perfect for vegetarians, this sauce is packed with hidden vegetables and will go well for pizzas and pastas.
 
 
 

800g tinned, chopped tomatoes
1 red onion, finely diced
4 mushrooms, diced
1 large handful, broccoli florets well chopped
½ red pepper, seeded, diced
310g can chickpeas, rinsed, drained
120ml red wine (optional, but recommended)
2 tbsp sun-dried tomatoes in oil, sliced
1 tsp minced garlic
1 tbsp sugar
2 tbsp balsamic vinegar
2 tbsp fresh basil, finely chopped
1 bay leaf

1 vegetable stock cube

Place a large saucepan over medium heat.

Add all of the ingredients and bring to the boil, then lower to a simmer and leave it bubbling away for 30–40 minutes or until everything is tender.

Remove from the heat and discard the bay leaf.

Use a blender to whizz the sauce it until you have a smooth texture.

Taste and season if necessary
