Vegetarian Thai red curry

Vegetarian Thai red curry
This vegetarian recipe is full of flavour and is a great way to use up any leftover rice.
 

500g rice

1 large red onion

1 glove garlic, crushed

1 tbsp olive oil

2 carrots, diced

Thai red curry paste

1 red pepper, diced

1 green pepper, diced

3 tbsp soy sauce

Cook your rice according to instructions. Once cooked set aside.

Heat your oil in a wok or large frying pan on a high temperature. Add in your onions and garlic and sauté for about 3 minutes.

Add your carrots and peppers and cook for a further 5 minutes

To make your curry paste, combine the red curry paste, soy sauce and a little water. Mix together until it forms a thick paste.

Combine your rice and vegetables together before spooning on your curry paste.

Make sure they are combined together really well.

Serve hot.
